Hightower’s beautiful presentations on oversized serving pieces are calculated to wow the eye. But what you’ll remember most are the flavor combinations of dishes like the seared scallop trio, each piece paired with a different sauce or purée to be eaten in order, mildest to boldest. Try the steak-and-eggs starter, which won’t look like what you expect — but that’s the idea.
